The Story

Maybe it’s the backdrop of the majestic Comeragh mountains, maybe it’s the breathtaking vista of Dungarvan Bay or maybe it’s the lush and yielding hinterlands.  From wherever they draw their inspiration, Dungarvan has produced an embarrassment of riches of talented, passionate and imaginative chefs.

No more apt adjectives could be used to describe Eunice Power, farmer’s daughter, chef and proprietor of Eunice Power Outside Catering, one of Ireland’s leading event caterers.

Eunice has gained an international reputation as a chef whose passion for good seasonal food and hands-on approach to cooking knows no bounds.

Having travelled and worked abroad in the catering industry, Eunice returned to her home town of Dungarvan to set up the acclaimed Powersfield House with her husband Edmund, which was awarded the Georgina Campbell’s B&B of the Year award in 2012.

However, realising there was a gap in the market for quality catering Eunice established her outside catering company in 2001.  What soon garnered Eunice a reputation for the being one of the best in the country was her commitment to using locally sourced, fresh seasonal produce, infused with creativity and flair.

“We are so lucky here in Waterford to have some great producers.  The volume of quality ingredients is astounding.  We try, when and where we can, to support local businesses and that support is reciprocated.  Dungarvan and the surrounding areas is home to a vibrant and exciting food producers’ network who are palpably proud of what they do and what they produce.”

The range of events that Eunice caters for has grown exponentially.  Her passion for good food and commitment to great quality has Eunice in demand for bespoke family celebrations, speciality occasions, weddings and sporting and corporate events.

Eunice’s zeal for seasonal food is hardly contained in her regular food columns and her national radio and TV appearances.  “When eating food, you should be able to tell what month of the year it is.  If it’s claimed as fresh, you shouldn’t be eating strawberries in November, pumpkins in June or mackerel in December.”

Eunice is committed to helping people get the most out of good ingredients and educating them in eating well.  Her columns in the Irish Times have featured a host of tasty and doable recipes for “Adventures with a slow cooker”, “Cracking Easter Desserts”, “Christmas presents you can eat” and “Easy to prepare healthy lunches.”

Locally in Waterford, consumers have direct access to a delicious range of products from Eunice's kitchen, including chutneys, relishes and marmalades as well as puddings, cakes and mulled wine syrup at Christmas.

Eunice also works closely with small food enterprises and with Failte Ireland and Tourism Ireland in a training capacity.  Eunice Power Catering is a member of Good Food Ireland, Slow Food Ireland and championing one of the region’s favourite food festivals, Eunice is on the Board of Directors of the Waterford Festival of Food.  She is also a tutor at the Tannery Cookery School in Dungarvan.
